85 Years - Green Chile Cheese Flautas

Ingredients:

32 small flour tortillas
4 – 4oz cans green chiles, drained
16 ounces shredded Monterey Jack cheese
2 (8-ounce) can creamed corn
32 toothpicks
Cooking oil

Preparation:

  1. Mix chile, cheese, and corn thoroughly in a medium bowl.
  2. Place 2 tablespoons of chile mixture in the middle of a tortilla, wrap tightly and secure with a toothpick.
  3. After all the tortillas are filled and rolled into flautas, heat a skillet with cooking oil and add the flautas, 3 or 4 at a time, to the hot oil. Fry on all sides until golden brown. Usually about 10 minutes.
  4. Drain on paper towels and serve with salsa or guacamole. (Be sure to remove toothpicks before serving)

Yields 32 Flautas (8 to 10 people)
Also very tasty with shredded chicken added to the mixture.
