ADS – Green Chile Crab Cakes

Ingredients

1/4 cup butter, melted
1/2 cup red onion
1/2 cup red bell pepper, diced
1/2 cup green bell pepper, diced
1 – 16oz jar chopped green chiles
2 – 16oz cans Blue Crab Meat
3 whole eggs
3/4 cup bread crumbs
1 cup parmesan cheese
1/4 TSP salt
1/4 TSP black pepper

Directions

  1. Melt butter in a medium sauce pan
  2. Add the red onion, and the red &green bell peppers and sauté for 2 minutes to soften
  3. Remove from heat and refrigerate while the rest of the ingredients are put together
  4. Drain the juice out of the Blue Crab meat and set aside
  5. In a medium mixing bowl add whole eggs and whisk
  6. Now add crab, green chiles, bread crumbs, shredded parmesan cheese, and spices
  7. Add cooled pepper and onion to bowl and mix well
  8. Take 2 oz balls of the crab mixture and form into 3 inch patties that are 1/4″ thick
  9. Add a little cooking oil to a cast iron skillet or similar pan and use medium heat
  10. Place 3 or 4 patties in the pan and brown 2-3 minutes, turn over and allow other side to brown as well.
  11. Remove from heat and serve with remoluade sauce
  12. Garnish with additional chopped chives and fresh lemon wedge
