Ingredients
1/4 cup butter, melted
1/2 cup red onion
1/2 cup red bell pepper, diced
1/2 cup green bell pepper, diced
1 – 16oz jar chopped green chiles
2 – 16oz cans Blue Crab Meat
3 whole eggs
3/4 cup bread crumbs
1 cup parmesan cheese
1/4 TSP salt
1/4 TSP black pepper
Directions
- Melt butter in a medium sauce pan
- Add the red onion, and the red &green bell peppers and sauté for 2 minutes to soften
- Remove from heat and refrigerate while the rest of the ingredients are put together
- Drain the juice out of the Blue Crab meat and set aside
- In a medium mixing bowl add whole eggs and whisk
- Now add crab, green chiles, bread crumbs, shredded parmesan cheese, and spices
- Add cooled pepper and onion to bowl and mix well
- Take 2 oz balls of the crab mixture and form into 3 inch patties that are 1/4″ thick
- Add a little cooking oil to a cast iron skillet or similar pan and use medium heat
- Place 3 or 4 patties in the pan and brown 2-3 minutes, turn over and allow other side to brown as well.
- Remove from heat and serve with remoluade sauce
- Garnish with additional chopped chives and fresh lemon wedge
