Ingredients
12 Cups chicken broth
4 Cloves garlic, chopped
4 Medium Onions, chopped
1/4 CUP Extra Virgin Olive Oil
2 14.5 oz cans chopped green chiles
1 TBSP Cumin
1 Teaspoon dried Oregano
1/2 TSP Cayenne Pepper
8 Cups grilled Chicken, diced
2 Jalapeno Peppers, diced
1 Cup Diced Tomatoes
1/4 Cup + 2 TBSP Flour
2 Quarts cooked Great Northern Beans
Preparation
- In a stock pot add olive oil to onion, garlic, and jalapeño
- Sauté over medium-high heat until onions are translucent
- When onions are translucent, add flour and spices cook for 2 minutes.
- Add chicken broth to pot stir well.
- Bring to boil add chicken and beans to pot.
- Reduce heat simmer for 10mins then add chopped green chiles and diced tomatoes until thickened.
- Garnish with a dollop of sour cream and chives.
