White Chile Soup with Green Chile

Ingredients

12 Cups chicken broth
4 Cloves garlic, chopped
4 Medium Onions, chopped
1/4 CUP Extra Virgin Olive Oil
2 14.5 oz cans chopped green chiles
1 TBSP Cumin
1 Teaspoon dried Oregano
1/2 TSP Cayenne Pepper
8 Cups grilled Chicken, diced
2 Jalapeno Peppers, diced
1 Cup Diced Tomatoes
1/4 Cup + 2 TBSP Flour
2 Quarts cooked Great Northern Beans

Preparation

  1. In a stock pot add olive oil to onion, garlic, and jalapeño
  2. Sauté over medium-high heat until onions are translucent
  3. When onions are translucent, add flour and spices cook for 2 minutes.
  4. Add chicken broth to pot stir well.
  5. Bring to boil add chicken and beans to pot.
  6. Reduce heat simmer for 10mins then add chopped green chiles and diced tomatoes until thickened.
  7. Garnish with a dollop of sour cream and chives.
