Layered Burrito Casserole

Ingredients

2 – lbs ground beef
2 – tsp minced garlic
1 – medium onion, chopped
2 – 15 oz. cans Ranch Style beans
1 – 16 oz. can whole kernel corn
1 – 2.5 oz. can sliced black olives
1 – 10 oz. can diced tomatoes
1 – 4 oz. can chopped green chiles
8 ounces sour cream
3 cups shredded cheddar cheese
1 tsp. salt and pepper
10 medium flour tortillas

Preparation

  1. Preheat oven to 350 degrees F.
  2. Sauté ground beef in a large skillet for 5 minutes.
  3. Add onion and garlic to skillet and sauté for 5 more minutes.
  4. Drain excess grease and mix in the corn, olives, tomatoes, green chiles,, sour cream, and ranch beans and simmer for 15 minutes.
  5. Spread a thin layer of meat mixture in the bottom of a 4 quart casserole dish. Cover with a layer of tortillas followed by more meat mixture, then a layer of cheese.
  6. Repeat tortilla, meat mixture, cheese pattern until all tortillas are used topping off with a layer of meat mixture and cheese.
  7. Bake for 20 to 30 minutes, or until the cheese slightly brown and bubbly.
