Green Chili Meatloaf

Ingredients

2 lbs ground beef
2 whole eggs
1/3 cup bread crumbs
1 – 16 oz. jar green chili sauce
1 – 4 oz. can green chilis
½ tsp salt
½ tsp pepper

Preparation

  1. Preheat oven to 375 degrees.
  2. Add all the ingredients to the ground beef expect ¼ of the green chili sauce and mix thoroughly.
  3. Place in baking pan and press gently to remove air pockets.
  4. Pour remaining green chilli sauce on top of ground beef mixture.
  5. Cover baking pan with foil and bake for 1 ½ hours or until the internal temperature reaches 170 degrees.
  6. Remove from oven and drain grease.
  7. Let stand for 10 minutes then slice and serve.
