Green Chile Pecan Dressing

Ingredients

1 cup pecan pieces
2 tbsps melted butter
½ tsp garlic powder
¼ tsp salt
1 tsp paprika
¼ tsp ground red pepper
8 ozs cheddar cheese (shredded)
7 cups cornbread crumbs
6 cups biscuit crumbs
15¼ ozs corn kernels (whole, drained)
4½ ozs green chile (chopped drained)
2 eggs (lightly beaten)
¼ cup fresh cilantro (chopped)
½ tsp salt
½ tsp dried oregano
¼ tsp black pepper
3½ cups chicken broth

Preparation

  1. Combine pecans, melted butter, garlic powder, salt, paprika, and red pepper in a small bowl, mixing well. Place on a baking sheet and bake at 350° for 10 minutes or until toasted; set aside.
  2. Combine the bread crumbs (corn & biscuit), corn, green chile, eggs, cilantro, salt, oregano, and black pepperin a large bowl with the cheese.
  3. Add the chicken broth, stirring just until moistened. Spoon dressing into a lightly greased 13″ x 9″ baking dish.
  4. Bake, uncovered, at 350° for 50 to 55 minutes or until set and lightly browned. Garnish, if desired.
