Ingredients
2 tbsp butter
small onion, chopped
4 oz can chopped green chilies
1 cup cooked ham, cubed
8 eggs
¼ cup milk
½ cup shredded cheddar cheese
Directions
- Preheat oven to 400 degrees F. Grease a 10-inch round baking dish.
- Melt butter in a large skillet over medium heat and sauté onions.
- Add green chilies and ham to skillet and cook until thoroughly heated.
- Whip eggs and milk in a large bowl.
- Stir cheddar cheese and ham mixture into bowl; season with salt and pepper.
- Pour mixture into prepared baking dish and bake until eggs are browned and puffy, about 25 minutes. Serve warm.
