Baked Denver Omelette

Ingredients

2 tbsp butter
small onion, chopped
4 oz can chopped green chilies
1 cup cooked ham, cubed
8 eggs
¼ cup milk
½ cup shredded cheddar cheese

Directions

  1. Preheat oven to 400 degrees F. Grease a 10-inch round baking dish.
  2. Melt butter in a large skillet over medium heat and sauté onions.
  3. Add green chilies and ham to skillet and cook until thoroughly heated.
  4. Whip eggs and milk in a large bowl.
  5. Stir cheddar cheese and ham mixture into bowl; season with salt and pepper.
  6. Pour mixture into prepared baking dish and bake until eggs are browned and puffy, about 25 minutes. Serve warm.
